Pillowy Soft Orange Chocolate Chip Cookies


Dry:

1/2 cup millet flour

1/2 cup almond flour

1/3 cup coconut flour

1/3 cup chocolate chips

1 tbsp arrowroot powder

1/2 tsp baking soda

1/4 tsp salt

1/8 tsp nutmeg

1/4 tsp cardamom


Wet:

Zest of 1 orange

4 tbsp melted non dairy butter or coconut oil

2 tbsp oat milk

1 tsp vanilla


Directions:

Preheat oven to 350 degrees Fahrenheit. Sift dry ingredients into a large mixing bowl. Add chocolate chips, and mix. Add wet ingredients and mix using a handheld or stand mixer until thoroughly incorporated. Roll about 1" diameter balls of dough and gently pat down to about a 1/4 inch. Bake for 10 minutes on a baking sheet (I love using a silpat mat on the baking sheet). Let cool for at least 15 minutes on the baking sheet. The most important step is to find yourself a quiet spot to sit with a cold glass of oat milk, and consume as many cookies as your heart and stomach desire!


Herbal Addition Suggestions: You could also add 1 tsp of Maca, Ashwagandha, or Shatavari powder (my personal favorites) for an adaptogenic boost without compromising on flavor!
